Our meats are sourced locally and hand trimmed by our Pitmaster, William Bailey, every day. This attention to detail is evident in every moist bite. William takes great pride in the art of smoking meat and applies the skills he has learned over the years to create perfect Central Texas BBQ. William is a traditionalist and uses only post oak in the hand stoked firebox. Courson's meats are hand crafted with a traditional salt and pepper rub then smoked low and slow using an off set smoker.
William smokes his brisket approximately 12 hours. This approach produces a nice peppery bark. Brisket is normally either moist or lean, around these parts moist wins the day, but if you prefer a lean cut just ask for your choice. Brisket is a hot commodity and sells out fast so get yours before the sold out sign gets posted.
When William's first rack of pork ribs came off the smoker he knew he was on to something big. Folks around Austin began referring to William's pork ribs as "the best they've ever had".
Williams smokes his pork butts approximately 8 hours. The pork butts get the same salt & pepper treatment as the brisket. William has a special wrapping and smoking technique that imparts massive amounts of smoke flavor into the pork. The result is tender moist pulled pork.
Occasionally William will smoke chicken. Smoking chicken is a lot more demanding and requires exceptional smoking skills to master. William sources his chickens thighs locally and his chicken rub is an original mix of spices and peppers sure to awaken your taste buds.
William created the "Meat Boy" by combining his smoked sausage and Courson's award winning smoked brisket chili. The Meat Boy is available for a limited time.
William partners with the Texas Sausage Company in Austin Texas to supply his sausage. William smokes his sausage with care daily and turns out a great moist tender and tasty link with a snap!
